The season's first pluck after winter, when the plants wake and push out their most delicate leaves. The most sought-after harvest of the year, and it tastes like it.
Gunpowder green with a faint smoke, built to carry mint and sugar without disappearing underneath them. Spearmint is the traditional pour; peppermint is the cooler, sharper reading.
