The rarest and most prized of the white teas, made from nothing but the top spring bud, hand-picked and dried in open air. No rolling, no firing. The cup is delicate and naturally sweet: fresh hay, honeysuckle, a touch of white grape, and a smooth finish with no bitterness. Single-origin from Fuding, on the Fujian coast where Silver Needle was born. 100g, picked this spring.

How to steep: Heat water to 175–185°F (just off the boil). Use about 1 tbsp of buds per cup, steep 3–5 minutes. Re-steeps well, so keep the leaves for a second and third cup. Use filtered or spring water.
